Noodles with apples and walnuts

(Magyar változat)


This is a variation on the simple dish you get at the canteen. Instead of simply putting ground walnuts mixed with castor sugar on the noodles, I prepare a spicy sauce of apples, mingle this with the cooked noodles, then put the walnuts on top.

Ingredients per serving:

80 – 100 g dried noodles (szélesmetélt), plenty of water, salt; 1 green apple, 1 Tsp butter, 2 Tsp oat bran, 100 ml white wine or apple juice, ground cinnamon, raisins, ground walnuts.

Preparation:

  1. Bring the water to boil, then add some salt and the noodles. Cook until it comes to the top of the water and gets soft.
  2. Meanwhile, prepare the sauce: Core and peel the apple, then cut it into small pieces. Heat the butter in a large saucepan, add the apple, and fry it for a few minutes, stirring occasionally. Then add the oat bran, sprinkle with ground cinnamon, and pour the wine/juice on it. Cook for a few more minutes, until it thickens. Finally, add the raisins.
  3. Drain the noodles, then put them into the sauce and mingle the two.
  4. Serve immediately, generously sprinkled with ground walnuts. If you have a sweet tooth, you may also dribble some honey on it.
